We rescue bread from being wasted, ferment it into miso, and share the process through small-scale production, workshops, and storytelling.
By combining Japanese fermentation knowledge,
local ingredients, and the diverse cultures of Rotterdam, we create food that connects people to each other and to the city.
Vision
We envision a future where surplus food is valued as a resource, fermentation is a common language, and cities produce
their own flavors sustainably.
Bread Miso imagines urban food systems where:
