Sustainable Development GoalsとWAKEAT.♡
WAKEAT think "Mottainai" is just a very simple way to represent SDGs / Sustainable Development Goals.
WAKEAT believes miso can solve many problems and can
highlight the colorful world for all of us .
Miso is not something new or special, it just helps us continue what we have been doing regularly in our daily life.
That's all. Ans that's the beauty.
WAKEATにとって「もったいない」とは日常にある身近なSDGs。
だから「特別」な何かではなく、日常の生活の中で今までしてきたことを、シンプルにこれからも続けること。
それだけです。
WAEKAT uses what already exists as a part of ingredients of miso. We utilize and repurposed byproducts of tofu, beer and plant-based milk.
At WAEKAT, we believe there should be more accessible miso for all of us.
Moreover, WAKEAT loves to wear a "vintage"kimonos that has been all passed down generations and given to her by ancestors for which miso was a lifestyle. Like the byproducts we make our miso from, the kimonos were about to thrown away, because they were old, etc.
However WAKEAT alwaya finds true beauty inside of everything we encounter and these kimonos carry stories and time, just like miso!
WAKEAは、大豆やお米以外の素材をお味噌の原料として使うだけではなく、「今既にある」素材にも注目し、お味噌に生まれ変わらせています。
それは、豆腐やビールの製造過程で出る副産物であったり‥。
それにより、もっと沢山の人や動物に、生きているお味噌が届く未来が来ると信じています。
WAKEAが身につけている着物達は、実は全て譲り受けた「いただきもの」。
古くなっちゃった、もう着ない。
「必要のないもの」「価値のないもの」とされた理由は様々です。
でもWAKEATにとっては、キラキラしたもの。
その着物達にあるストーリーの一つ一つ、
そして想いが時間と共に発酵し、運命的に、WAKEATの元へ来てくれた事が嬉しく、愛らしいと感じます。
Living miso can bring many health benefits to us.
WAKEAT makes only simple-but-real miso, without any additives. We use honest and mainly organically grown ingredients and create our miso the old fashioned way, with time and patience. These values apply to all our miso products.
WAKEATは、余計な添加物のない、シンプルなお味噌を作っています。自然と共に、周りの環境を呼吸しながら発酵、熟成した素直なお味噌達です。
そんなお味噌は「おばあちゃんの知恵」の如く、人々と自然の健康に繋がると思っています。

WAKEAT conducts miso-making classes as a part of education for all generations to join and learn.
WAKEAT supports all genders. We can become who all really are, by breaking our "stereotypes" little by little. That's what WAKEAT also try to present by breaking stereotypes of miso!
All miso has different taste, but they are also all good and right.
WAKEATは「MISO教室」を世界中で様々な世代に行っています。
MISO教室は、お味噌に関する内容はもちろん、お味噌の中で菌達が繰り広る世界で見え隠れする哲学、宇宙、歴史、信仰、音楽など、一見関係のない様に思える分野についても話したりする、
ちょっと変わったMISO教室です。教室で作るお味噌は、一つとして同じものは出来ません。どのお味噌も味が違って、それぞれの良さがあり、どれも「正解！」だとWAKEATは思っています。

WAEKAT only uses our renown"natural fermentation method" to make miso.
We don't try to control natural environment, such as temperatures and humidity for ageing miso, therefore no extra energy is involved.
We go with the tide, not against it - We work with what mother nature gives us and we love time and tradition.
WAKEAT only uses plant based ingredients for all our products too.
WAKEATは天然醸造のお味噌のみを作っています。
お味噌の発酵・熟成の期間は、気温、湿度などのコントロールをしないため、ほぼエネルギーを必要としません。WAKEATのお味噌達は、与えられた自然環境と共に、ゆっくり時を過ごしています。

WAKEAT is not only a-traditional miso brewery. We are also very progressive. We use very traditional methods of miso making and respect them, however we are keep challenging evolve the new processes.

Health should be for everybody. Peace only comes with a healthy body and mind. WAKEAT believes the power of food can achieve peace and world symbiosis.
